Spanish Rice Recipe

1 3/4 cups water
2 chicken bullion cubes
2 jalapeño peppers
1 can Del Monte Diced Zesty Chili Style Tomatoes
1 medium onion
1 teaspoon crushed garlic
1 teaspoon cumin
2 cups rice
2 tablespoons oil

Place 2 chicken bullion cubes in 1 /34 cups of water and microwave for 4-5 minutes to melt cubes. Remove seeds from jalapeño peppers and dice. In a food processor combine chopped medium onion, diced jalapeño's, cumin, garlic and can of tomatoes.

In a 2 qrt pan, heat oil and add rice. Stir rice until coated with oil and heat for 1 - 2 minutes. Add broth and tomato mixture to pan. Heat to boiling. Reduce to low and cover for 20 minutes.

Remove from heat, leave covered and let rest 5 minutes before serving.
